Citrus zest is full of compounds that fight cancer. When you squeeze a lemon (or peel an orange), save the skin.
The compounds, known as polymethoxylated flavones (PMFs), are antioxidants that belong to a group of plant chemicals called flavonoids.
Research suggests the compounds help guard against heart disease and cancer, and two other citrus flavonoids--hesperetin from oranges and naringenin from grapefruit--have shown early promise in lowering cholesterol.
So next time zest the well-washed fruit and add to baked goods, yogurt, salad or hot tea.
